Indian hen soup with chilote and quesquisque

Indian Hen Soup

(Sopa de albondigas de gallina india)

Traditional Nicaraguan hen soup with chicken-balls and a variety of vegetables.

The hen must be 'indian'. That is to say, a hen that have lived in the countryside eating seeds, worms and whatever it could find.

The typical vegetables are: Chilote (baby corn), quesquisque, potato, carrot and chayote.

Pasta with a vegetable sauce created by the chef.

(Named after the nearby Venice Beach, which is the most Italian thing we have here arround)

If you are not a vegetarian we can add ham to the sauce.

The kinds of meat depend on what is in house, but we always offer beef and chicken.

3 chicken wings fried in chili sauce, with tortilla and a tomato-onion dressing.
The chickens we serve grilled and fried are 'white chickens' or should we say breeded in a modern poultry farm. Our local community supply enough 'Indian chickens' in order for us to use them in all our dishes.

Carrot-coconut cake

Carrot cakes have been made in Denmark for many years. They are brownish, almost the color of chocolate. Adding coconut the apperance changes into a fresh yellow color.

We also make cakes with cashewnuts or filled with guanabana jelly, also very delicious, should we say, but no one has been a succes like the carrot cake. We have visitors who come again and again only to eat a piece of our carrot cake.
