Our kitchen
To guaranty that eating at Flor de Pochote will be a good experience,
we work seriously to maintain quality and hygiene.
Raw materials
We prefer to use our own raw materials or supplies from known
sources, such as well known neighbours. By this means we are able to assure
that the products have been handled without excess use of chemicals, and
that basic hygienic measurements are taken.
But we recognize that for a long period, we will also depend on
purchasing food in shops and on the market, but also here we try to
select the most reliable suppliers in town - and if we do not find a good
enough
product in Masatepe, we go to Masaya.

Hygiene
To control the active tropical bacteria is one of the main
challenges to any kitchen in Nicaragua. Local staff generally care
about cleanliness, but due to lack of education they will not be
aware of all details and risks related to a restaurant kitchen.
We therefore do an effort to train our staff in matters of hygiene and
food handling, and at present we are preparing a new kitchen that allows
us
to establish 'safe procedures' in all areas of the process, such as like dishwashing and
the handling of meat.
However, nobody is better to control than the people who will eat
the food. Therefore our cooking is done in open places where our gusts
are welcome to follow the processes.

Skills and habits
Rules and recipes alone can not guaranty a tasty and healthy dish. You
also
need a cook that feels pleasure in serving a good meal.To
do a good job you first of all needs practical skills and knowledge.
We therefore spend time in training, informing and meeting with our
staff reguarly.
Just as important is it to feel well on the job, and to feel that your
service is appreciated. We can do part of this job, but here we
appreciate
the participation of our guests. We know that nothing stimulates
the staff more than when our visitors give their compliments directly
to the cook or the maid. |
